half an avocado
diced red onion
toasted pita (we like to sub in millet or multigrain spelt toast)
In a bowl, combine diced tomato, cucumber, red onion and juice and zest of one lemon. Cook two eggs sunny side up, or whatever way you like. On a plate, place slices of avocado, a large spoonful of the diced vegetable medely, toasted pita, and a dollap of labneh cheese. Enjoy!
