6 lamb chops
6 sprigs of fresh rosemary
8 cloves of garlic, smashed then chopped
1 teaspoon of dried oregano
Extra virgin olive oil
Cracked black pepper
In a large bowl, place lamb chops. Cover with a good glug or two of olive oil. Add garlic, rosemary, oregano, salt and pepper and massage well with your hands so seasoning is distributed evenly.
Place in refrigerator to marinate for 1-4 hours. Remove from fridge 1 hour before roasting.
In a pre-heated oven, roast at 350 degrees for 20 minutes or until browned.
