2 cups organic unsweetened almond milk

1 Tbs apple cider vinegar

2 tsps baking soda

1 cup cornmeal, polenta or corn grits

1 1/2 cups of brown rice or white rice flour

1 tsp sea salt

7 Tbs raw cane sugar or brown sugar

1/3 cup coconut oil, melted

Turn on oven to 400 degrees.

Add vinegar to almond milk and set aside.

Whisk or stir dry ingredients together: baking powder, baking soda, corn meal, sea salt, sugar

Whisk or stir wet ingredients together: coconut oil, almond milk/vinegar slowly

Add wet to dry slowly, and stir to combine.

Pour into greased cast-iron skillet or 8 x 8 pan

Place in oven for 35 minutes until golden brown or until toothpick comes out clean.
