Package of large raw nori sheets
1 ripe avoado, pitted and sliced
1 head of romaine, sliced extremely thing
1 cup of prepared quinoa (red or white)
1/2 cup of raw fermented sauerkraut or kimchi

Dressing:
1/4 cup of soy-free Veganaise
Juice of half lemon
Bunch of fresh cilantro
2 tablespoons of wheat-free Tamari sauce
Sea salt to taste

On a flat surface, place nori sheet. From the bottom up, arrange romaine, quinoa, avocado and kraut/kimchi. Take a teaspoons of dressing and drizzle over vegetables. Carefully using both hands, roll the nori wraps into a tight cylinder, pulling the nori and tucking the vegetables/quinoas as you go. You may want to use more dressing to help the nori “stick.” Once the nori is rolled, with an extremely sharp knife, cut the cylinder into sushi pieces. Arrange on a plate with extra tamari sauce for dipping. Enjoy right away.
