This soup is light and refreshing, perfect for the warm summer months! Best of all, it’s raw so requires no cooking at all! 

Ingredients:
1 bunch of asparagus, washed, ends trimmed
1 small zucchini, washed ends trimmed
1 small to medium sized cucumber, peeled
1 handful of fresh mint (or any fresh herbs you have on hand like parsley, dill, cilantro)
1 clove garlic
Juice of 1/2 lemon
1 cup of spring water (cold)
Sea salt/Pepper to taste
Optional: Chevre goat cheese 

Roughly chop vegetables and toss everything into a high-speed blender. Add water, salt and pepper and if you want it to be extra creamy, add goat cheese. (If you want to keep it vegan, omit the cheese.) Blend until smooth. Serve with a sprig of mint or fresh herbs. Enjoy!
