4 large artichokes
4 garlic cloves, minced
1/4 cup of olive oil
Juice of 1 lemon
Sea salt
Black pepper
Trim stems of artichoke with scissors and snip spiky ends of leaves. Using a sharp knife, halve artichokes and place in bowl with some lemon juice on top to prevent browning.
In a large pot of boiling water, boil artichokes until tender, about 10 minutes. Strain and set aside.
In a small bowl, mix lemon juice, olive oil, salt/pepper and garlic.
Once a little cooler, rub halves with oil/lemon/garlic mixture until evenly distributed.
On hot grill, grill each artichoke side about 5 minutes each. Continuing until charred on the outside. Serve hot.
