6 cucumbers diced
4 roma tomatoes
1 cup of chopped fresh parsley
1/2 cup minced fresh mint leaves
1/2 cup olive oil
1 table spoon of salt
1 table spoon of black pepper
1 lemon

Wash and dice cucumbers, tomatoes, mint and parsley. Add to a large bowl along with olive oil, salt, pepper and lemon juice and toss well. Serve and enjoy
