I was recently introduced to the umeboshi plum and now can’t get enough. Salty, slightly sweet and FULL of umami flavor, it truly adds another level to this dressing you wouldn’t be able to get without. Plus they are high in fiber, antioxidants and even act as a natural antibiotic If you can’t find the plums, which are pickled in a jar in health food shops, you can substitute ume plum vinegar, which is much easier to find at Whole Foods or your local health market!


2 umeboshi plums, seeded or 3 tbsp of umeboshi plum vinegar

4 tablespoons olive oil

1 tablespoons vegan mayonnaise

1 tablespoon natural peanut butter

1-2 cloves garlic

1/2 lemon juice

1 teaspoon tahini

2 tablespoons Tamari sauce

1 teaspoon of Dijon mustard

1/4 teaspoon of toasted sesame oil

1 bunch of scallions

1/4 cup cold water or more for blending

sea salt and black pepper to taste


Combine all ingredients in blender or food processor, blend until creamy. Serve with salad or as a crudite dip or a grain bowl dressing!
