This salad, busting with crunch and bright, herby colors is probably my favorite that I’ve made in a while! It hits the spot with crunch, colors and flavor.

1 small head of cabbage

1/2 head iceberg

2 large carrots, peeled

1/2 small red onion

1 handful of fresh cilantro, chopped 

1 handful of fresh mint, chopped

1 handful of peanuts, crushed (sliced almonds will work too)

 

dressing:

4 tablespoons vegan mayo (I love Sir Kensingtons fabanaise or soy-free veganaise)

2 tablespoons apple cider vinegar

4 tablespoons of olive oil

1 tablespoon raw honey or agave

Sea salt

Pepper

Using a mandolin, shave the cabbage, onion and iceberg and transfer to a large bowl. Using a vegetable peeler, shave carrots and add to the bowl. Add chopped herbs and crushed nuts. In a small bowl, whisk together dressing ingredients. Pour over salad and toss!
