The past few weeks instead of working on my sourdough starter or planting gardens in focaccia, I’ve been all about easy, no-fuss meals that are quick and delicious. Blame it on having two toddlers at home or quarantine fatigue, but mama needs a break! Enter my favorite recipe I’ve been making on the regular. Yes, penne alla vodka. But not just any vodka sauce (that incidentally does not have any vodka at all), but OAT vodka sauce. Yes, you heard me right. I discovered that by adding creamy non flavored oat milk to your normal marinara, you get this decadent, creamy sauce in literally seconds. Of course I needed to add some Bonberi flair with a version of spicy shitake “sausage” and greens but it’s been a quarantine all-star that I had to share. Check out recipe below!

Creamy Penne Alla Vodka with Greens, Shitakes and Peas 
1 package of gluten-free penne
Sauce:
1 cup of Planet Oat Original Oat Milk
1 jar of your favorite marinara sauce
1/2 cup nutritional yeast
2 cups baby spinach
1 cup of defrosted frozen peas
“Spicy Sausage”
2 cups of sliced and de-stemmed shitake mushrooms
2 cloves garlic
1 tablespoon of avocado oil
1 teaspoon dried oregano
1/2 teaspoon chili flakes
1/2 teaspoon ground cumin
1/2 teaspoon fennel seeds
Sea salt
Pepper

Directions:
Cook pasta as directed, set aside. In a medium sized shallow pan, heat avocado oil, add fennel seeds, chili flakes, cumin, oregano and let sizzle for a minute on medium heat. Add sliced mushrooms and a little a water to help cook down. Season with salt and pepper. Saute on medium high heat until browned and edges are crisp. Set aside.
In a large pot, add jar of marinara sauce and bring to a boil, then simmer. Add nutritional yeast, peas and spinach, mix gently. Then add pasta. Mix well on medium low heat. Once pasta is fully coated in sauce, bring to a medium high heat and let cook for about 3-5 minutes to let flavor meld. Turn off heat and pour in oat milk. Mix gently until pasta forms a creamy sauce. Taste and season more if necessary. Remove from heat, plate and serve with shitake sausage on top with option chili flakes and nutritional yeast.
