1 head of Romaine thinly sliced
3 large carrots, peeled and shaved thin
1 large cucumber, peeled and julienned
1/2 red cabbage shaved
1 jalapeño, seeded and sliced
Chopped cilantro, basil and mint

Dressing:
Tamari, 2-3 tablespoons
1 tablespoon maple syrup
Juice of 1 lime
1/4 cup filtered water

Optional: chopped peanuts or cashews for topping


Combine salad ingredients in a large bowl. Whisk dressing ingredients. Pour over and top w/ crunchy nuts if using. Enjoy!
