This simple and easy recipe can be applied to almost any squash. We particularly like butternut, delicata, kabocha, acorn or sweet dumpling for this recipe.  

One whole squash
Oil (Coconut, Grapeseed, or Olive depending on your preference)
Cinnamon
Cumin
Turmeric
Fresh Black Pepper
Paprika 
Parchment Paper

Preheat oven to 375F. Clean and cut squash into inch size cubes. In a bowl, combine squash with enough oil to coat but not soak. Add in cinnamon, cumin, turmeric, black pepper and paprika. Mix well so cubes are evenly covered.  On a parchment lined baking sheet scatter the cubes evenly. Bake for about 40 minutes, turning the cubes every 10-15 minutes with a wooden spoon until they are fork tender and browned. Add to salads, quinoa, rice or eat the squash on it’s own!
