Preheat Oven to 375F. In a bowl, combine peeled baby carrots, fresh thyme leaves, sprinkles of sea salt, cinnamon, cumin and fresh black pepper. Drizzle grape seed oil and stir until the carrots are evenly coated. Place them on a baking sheet and into the oven. Rotate even 10 minutes so they cook evenly. Cook until fork tender, about 45 minutes.
