1 bunch of lacinato kale
1 large watermelon radish
1/4 cup of feta cheese

Juice of 1 lemon
1 teaspoon of dijon mustard
Extra virgin cold-pressed olive oil
1 shallot, minced
Sea salt / pepper

Slice kale into thin ribbons and place in large bowl. In separate small bowl, whisk dressing ingredients. Add dressing to kale and massage well with hands until kale is broken down and soft. Season with salt and pepper.

Using a mandolin or sharp knife, peel radish and slice into extremely thing slices. Add to bowl of kale. Top with crumbled feta. Enjoy!
