Mixed greens of choice
1 or 2 chopped tomatoes
1 shaved and chopped Persian cucumber
1/2 shaved red onion
Chickpeas
Freshly chopped dill
Dressing:
1 tablespoon tahini
2 tablespoon olive oil
Juice of 1/2 lemon
Ice cold water to thin out
Sea salt
Fun optional toppings:
Hilary’s eat well spicy vegan sausage
Mix all the veggies in a big bowl. Thoroughly mix your dressing ingredients until creamy and drizzle over veggies. If you choose to add the toppings, top your salad with them at the end and mix it all together.
