1 pound of dried cannellini beans of white northern beans, soaked overnight in water with a piece of kombu and splash of apple cider vinegar
5 cloves of garlic, chopped
2 bay leaves
1 teaspoons dried oregano
1/2 teaspoon smoked paprika
Juice of 1 lemon
4 cups water
1 cup crushed tomatoes or marinara
1 bunch of kale, destemmed and roughly chopped
Sea salt

Set Instantpot to sauté and add 1 tablespoon avocado oil. Add chopped garlic, 2 bay leaves, paprika, oregano. Then add soaked and strained beans, water, 1/2 teaspoon sea salt and tomatoes. Switch setting to high pressure at 40 min. Release at 20 minutes or longer. When done, add lemon juice, chopped kale and season finally w more sea salt and pepper. Serve hot!
