So satisfying and the yummiest accompaniment to veggies or a big leafy green salad.

2 cups white basmati rice, rinsed or soaked for an hour
4 cups water
1/2 cup of chopped cilantro
2 cloves garlic, minced or shaved on a microplane
1/2 lime of lemon
2 tablespoons coconut oil or ghee
Sea salt
Pepper

 
Place water and rice in a large pot. Bring to a boil then simmer cover until rice is cooked, about 15 minutes. Remove lid and fluff immediately so it doesn’t clump. Add in ghee or oil, grated garlic, and squeeze of lemon or lime. Season w sea salt and pepper. Add chopped cilantro after removing from heat and mix delicately. Serve hot!
