1-2 zucchini, roughly chopped
1 handful of cauliflower florets
1 yellow onion, chopped
1 knob ginger, minced
3 stalks celery, chopped
1 cup of broccoli roughly chopped
2 tablespoons avocado or coconut oil
1/2 teaspoon coconut sugar
Handful of leafy greens like kale or spinach or both
1/2 cup coconut milk
Optional: 1/2 teaspoon galangal powder
1 teaspoon kaffir lime leaf flakes or lime zest
Salt and pepper
Cilantro to garnish

Heat oil in a large pot. Add onions, ginger and celery. Saute until fragrant. Add zucchini and celery and sauté for one minute. Add lime leaf flakes, coconut sugar and galangal powder if using. Add 2 cups water and bring to a boil. Then cover and lower to a simmer. Let simmer for 10 minutes or until veg is tender. Add broccoli and greens. Turn off heat and cover for 5 minutes. Let cool and transfer to blender, blend in batches. Pour back into pot and add coconut milk, stir and season w/ salt and pepper. Serve w/ cilantro and a drizzle of coconut milk.
