1 head romaine, thinly sliced
1/2 napa cabbage, thinly sliced
2 small cucumbers, thinly sliced
1 large carrot, peeled and thinly sliced
Few leaves of lacinato kale, thinly sliced
1/2 red onion, thinly sliced
1/2 cup of cooked and cooked green peas
1/2 cup of mint leaves, chopped
Handful of roasted unsalted peanuts, chopped
1 teaspoon sesame seeds
1/2 of raisins or dried currants

2 tbsp natural peanut butter
1/2 tsp toasted sesame oil
4 tbsp rice vinegar
1 tbsp raw honey
1 tbsp tamari or coco aminos
1/2 tsp grated ginger
Water to dilute

Whisk dressing ingredients in medium size bowl. Pour over salad, toss and enjoy!
