4 large cucumbers, peeled, quartered then chopped
4 tbsp tamari
2 tbsp rice vinegar
1/2 teaspoon toasted sesame oil
1 tsp raw honey or maple syrup
1 handful of cilantro, chopped
1 handful of roasted unsalted peanuts, chopped
1 tsp @mrbingnyc chili crisp or your fave brand

Toss everything together in a big bowl and serve! Can last in the fridge for a few days for a quick pickled treat
