Tuscan Pesto Pasta Salad
Ingredients
Salad Base
2 cups of arugula
1 cup of chopped radicchio
1 endive, chopped
ZENB Pasta Salad
1 box of ZENB Rotini
1/4 cup capers
1/2 cup halved grape or cherry tomatoes
2 whole red bell peppers
2 small zucchini
3 Persian cucumbers (or 1 large cucumber)
1/2 cup sliced pitted black olives
1 clove garlic
Olive oil
Pesto Dressing
1 packed cup of fresh basil
1 cup of fresh parsley
3 cloves garlic
Juice of 1 lemon
1 cup of good olive oil
1/4 cup of raw sunflower seeds
2 tablespoons of nutritional yeast
Salt and pepper to taste
