1 large tortilla (I used brown rice but regular or almond flour work well!)
Handful of vegan mozz (I used Daiya Foods)
2 spoons of marinara sauce
Pinch of sea salt
Pinch of dried oregano
Thinly sliced zucchini (baby spinach or thinly sliced asparagus, fennel or broccoli stems work too!)
Olive oil
Chili flakes
Bonberi bonus pts: arugula or sprouts to top!

Preheat toaster oven to 425. Place tortilla on baking sheet. Spread tomato sauce evenly on tortilla. Sprinkle w/ cheese. Arrange one layer of zucchini on top, try not to overlap. Drizzle olive oil on top, a little sea salt, oregano and chili flakes. Bake for 10-12 min until cheese is bubbly and tortilla browned. Remove, cool, slice, top w/ raw greens and enjoy!
