Thai Style Basil Fried Rice Lettuce Cups

1 cup jasmine rice

2 cups water

2 tbsp avocado or coconut oil

4-6 cloves garlic, thinly sliced

1/2 white onion, minced

1 tsp grated ginger

1 cup Brussels sprouts, thinly sliced

1 bunch of broccoli rabe

1 cup grape tomatoes

1 bell pepper, cored and thinly sliced

1 bunch fresh basil, thinly sliced

1 bunch fresh mint, thinly sliced

1 lime

4 tbsp tamari sauce

Optional: 1-2 tsp coconut sugar

Salt and pepper

Lettuce leaves for wrapping

Optional:

1 tsp Kaffir lime leaves

1 tbsp sriracha.

Rinse rice until water runs clear. Add rice and water to pot and bring to a boil, cover and simmer until cooked. While rice is cooking, boil a salted pot of water and once boiling, add broccoli rabe. Cook until tender about 10 min, drain, chop and set aside. Set aside cooked rice. In a large pan, add oil, garlic, ginger and onion and sauté until fragrant. Add Brussels sprouts, tomatoes, bell pepper, and sauté until tender about 5 min. Add cooked rabe. Season with tamari, sugar, salt and pepper and lime leaves if using. Add rice and combine well on low heat. Season more if needed. Fold in basil and mint and squeeze in juice of half lime and sriracha if using. Transfer to bowls and serve with lettuce leaves for wrapping!
