10 Shrimp (cleaned out of shell)
Handful of chopped cilantro
Two Limes
One Jalapeño  (skin and seeds)
Two cloves of minced garlic
Red Pepper Flakes
Salt
Pepper
Skewers

 
In a large bowl, combine chopped cilantro, juice and zest of two limes, chopped jalapeño, minced garlic cloves, red pepper, sprinkle of salt and pepper. Add in shrimp and stir. Let marinate for 20 minutes. LIne up 3-4 shrimp on a skewer with half an inch in between so each one has space. Lay them on the grill on medium/high heat. Rotate after 5-10 minutes. Shrimp should take roughly 20 minutes, depending on the size, but ask the fish monger when you purchase them to be sure. The Shrimp should look toasted, not burnt, except for the ends of the tail which may show more char. Serve with simply grilled asparagus as the perfect side dish. Enjoy!
