Salad:
1 bunch of lacinato kale, sliced into thin ribbons
1 bunch of curly kale, sliced into thin ribbons
1 large cucumber, peeled and cubed
1 cup of pitted kalamata olives
1 red pepper, chopped roughly into bite-sized pieces
1 cup of cherry tomatoes, sliced
1 package of Haloumi cheese, cubed into bite-sized pieces
1 tablespoon of dill, chopped
1/2 red onion, chopped roughly into bite-sized pieces

Dressing:
1/4 cup extra virgin cold-pressed olive oil
Juice of 1 lemon
1 tablespoon of dried oregano
Sea salt/pepper

In large salad bowl, place kale. In separate small bowl, whisk dressing and add dressing to kale. Massage well with hands so that kale is softened. Add tomatoes, olives, red pepper, red onion and cucumber to bowl. Mix well. Set aside.

Heat pan. Add a teaspoon of olive oil to evenly coat pan. Add cubes of haloumi cheese and continue to turn until they’re browned on all sides. Remove from heat. When cheese cools, add cubes to salad bowl and mix well. Serve and enjoy!
