1 cup of cherry tomatoes, sliced
1 handful of torn basil, sliced thin
Juice and zest of 1 lemon
1 small avocado (or 1/2 of a large avocado), cubed
Sea salt / freshly ground black pepper
1 clove garlic, halved
2 thick pieces of rustic sourdough bread or whole grain bread

Optional: 1/2 tablespoon olive oil

Toast slices of bread to your liking. Rub half of garlic clove on both sides of bread and set aside. In small bowl, combine tomatoes, basil, lemon juice and zest, avocado and salt and pepper and olive oil if you wish. Mix so combined but not so avocado is mushy. Top on toast and serve.
