2 Cups of cooked quinoa
1 Steamed chicken Breast sliced into bite size pieces
1/4 cup of chopped mint
1/4 cup of slivered almods
1/2 cup of currants
1/2 cup of diced carrots
1/2 cup of scallions sliced on the diagonal
1/4 cup of lime juice
1 tsp of agave
1/2 tsp cumin
1 tsp salt
1/4 cup of very good Extra Virgin Olive Oil
* Mix well and then place a serving on top of a bed of greens and garnish the top with sliced radishes and/or sliced avocado.
