1 can of chickpeas, rinsed and drained (conserve a bit for topping)

2 cloves of garlic, smashed

1/2 teaspoon ground cumin

1/4 cup freshly squeezed orange juice

1/2 cup chopped steamed beets(conserve a bit for topping)

3 tablespoons of tahini

4 tablespoons of olive oil

sea salt to taste

Ice water as needed for blending


Combine all ingredients in food processor and blend until creamy. Top with extra chopped beets and chickpeas and a drizzle of olive oil. Serve with cut raw veggies and rye crackers or toast.
