1 clove minced garlic
1 tbsp coconut oil
1 cup chopped cauliflower
1 cup chopped broccolini
1/2 cup frozen peas
1 box brown rice pasta
¾ cup coconut milk (unsweetened)
1 tbsp sea salt
pepper to taste
pinch garlic powder
3 tbsp nutritional yeast
½ lemon squeezed

Chop broccolini and lightly saute in 1 tsp coconut oil. Add ½ cup green peas to boiling water. Add brown rice pasta to boiling water, lower heat and set timer for 10 minutes.

Directions:

  1. Saute the minced garlic with ½ tsp coconut oil for 3-4 minutes, until brown
  2. Add the coconut milk and bring to a boil. Add sea salt, pepper, nutritional yeast and cauliflower. Cook for 6-7 minutes until thick.
  3. Transfer all ingredients to blender, add ½ lemon and blend until smooth. 30-40 seconds.
